Oatmeal Raisen Breakfast Cookies

Oatmeal-Raisin Breakfast Cookies
(gluten-free!)
Also one of My Sugar-Free Recipes.
  • 1/2 cup rolled oats
  • scant 1/2 cup applesauce or over-ripe banana (mashed)
  • 1/4 cup nut butter (I used salted pb)
  • 1/4 tsp cinnamon
  • 1/2 tsp pure vanilla extract
  • 3 T raisins (or other dried fruit, or even chocolate chips)
  • pinch salt if desired (taste the dough to decide)
  • 1 packet stevia (or 1 tablespoon sugar. I actually omitted this altogether. If you have absolutely no sweet tooth, you can try it that way. And if you have a huge sweet tooth—or are used to “non-healthy-tasting” desserts—try adding 1/4 cup sugar. As I said above, don’t expect these to taste like your everyday oatmeal-raisin cookies. I’ll post a recipe for those soon!)
Preheat the oven to 350 degrees. Mash the banana with the nut butter, then add all other ingredients and mix until well-combined. Shape into cookies and bake for around 14 minutes. (Alternatively, you can try pulverizing the raisins and oats before combining them with the banana mixture, if you want more sweetness.)

Healthy Peanut Butter Balls

Healthy Peanut Butter BallsYields 16-18 balls

1 cup peanut butter, natural is preferred (chunky or creamy)
2 tablespoons honey (or agave nectar)
1 cup rolled oats
2 tablespoons ground flaxseed or wheat germ
2 tablespoons sweetened flaked coconut
cocoa powder, wheat germ, powdered sugar, chopped peanuts, (optional) - for coating
  1. Heat peanut butter and honey in the microwave until easily mixed, about 15-20 seconds.  Stir until blended.
  2. In a separate bowl, mix oats, flaxseed and coconut (if using) until combined.
  3. Add peanut butter mixture to oat mixture and stir until incorporated.  (Mixture may seem a little dry at first...just keep mixing).
  4. Form a rounded tablespoonful of the combined mixture into a ball and place on a plate.  Repeat until all mixture is used.  Now, if you do not want to coat the balls, skip to step 6.
  5. Roll each ball in whatever coating suits your preference.  Cocoa powder, powdered sugar, wheat germ, cinnamon sugar and chopped peanuts are some ideas.
  6. Chill the plate of balls in the refrigerator to set for at least an hour, or overnight.

Cilantro Lime Vinaigrette

Cilantro Lime Vinaigrette
2 tomatillos
1/2 bunch cilantro
2 cloves garlic
1 Tbsp. diced jalepeno (canned, optional if you don’t want spice)
Juice of 2 limes
1 Tbsp. sugar
1 c. balsamic vinaigrette (I used Kraft light version)
In a food processor or blender, combine tamatillos, cilantro, garlic, jalapeno, lime juice, and sugar. After it is all blended up well combine with balsamic vinaigrette in an airtight container and refrigerate for at least 2 hours (overnight is best).

Raw Cookie Dough Bites

Ingredients
  • 2/3 cup raw almonds
  • 2/3 cup raw walnuts
  • 2/3 cup raw oat flakes (see note below)
  • 1/4 tsp ground cinnamon
  • 1/8 tsp sea salt
  • 1/4 cup raw agave nectar
  • 2 tsp pure vanilla extract
  • 3 tbsp cacao nibs or dark chocolate chips
Instructions
  1. In a food processor, process the almonds, walnuts, oats, cinnamon and salt to a fine meal.
  2. Add the agave nectar and vanilla and process to combine.
  3. Next, add the cocoa nibs (or chocolate chips) and pulse just to combine.
  4. Roll the cookie dough into balls (about 1 tbsp each) and place them on a cookie pan lined with parchment paper. Place the pan in the freezer for about an hour to firm up. Store balls in a tightly covered container in the freezer.
Notes
Raw oat flakes can be substituted for regular rolled oats, but if you want this treat to be truly raw, look for raw oat flakes, which haven't been steamed or toasted during processing.
